For more than a decade, chef Paul Hathaway has provided French country cafe service with a focus on farm-fresh roasts and braises. Amy Paul, the bistro’s owner and front-of-house manager, says that the cocktail list has become more extensive. Chez Albert is also starting to host live jazz, from 8 to 11 p.m., on Sunday nights. And once the weather warms up, winter menu items — like potato leek soup and a rabbit/cabbage dish — will make way for springtime items. Hathaway, for one, can’t wait to hit up the farmers markets.
